Gin Thoke: An old favorite
Last night, I made one of our favorite recipes, gin thoke or ginger salad. I used our little homegrown cabbages, and it was delicious. I served it with baked tofu. Yum!

Recipe #15: Spicy Mayan Chocolate Pudding
Recipe: Spicy Mayan Chocolate Pudding
Verdict: I say "Yum!" My husband says "Interesting."
This pudding really is spicy!


The final product, garnished with kiwi, strawberry and a sprinkle of chili powder. The fruit was cooling and really cut the spice. It was perfect.

Recipe #14: Tofu with Noodles
Recipe: My creation
Verdict: Yum!!
Tofu: Cut tofu into cubes. Toss in marinade. Bake in a 450 degree oven until the desired texture.
I prepared the noodles according to the package directions. They soaked up more of the liquid than I expected :). Then I sauteed them with the veggies and some sesame oil.
Verdict: Yum!!

I made this for a get-together where we had a little True Blood marathon. If you haven't read the books by Charlaine Harris, you definitely should. They are an easy read and so much fun! Anyway, I liked the drink, but not enough to make it again. Others did not even really like it. Oh well :)

Recipe #12: Stuffed French Toast
Recipe: Stuffed French Toast (from a variety of sources and some of my creation)
Verdict: Yum!! Yum!! Yum!! Everyone must try this!!

First, cut the French bread into thick slices. Cut a pocket in the middle of each slice, not all the way through, only cutting one side. Fill with your favorite stuffing.
This one has mascarpone cheese with a teaspoon of vanilla and a teaspoon of sugar.
Melt some butter in a pan and dip the stuffed bread slices in a mixture of beaten egg, a little soy milk, vanilla and a dash of cinnamon. Dunk both sides of the bread in the egg mixture.
The finished product. Here it is served covered with raspberries and berry syrup, with a side of Morningstar Farms veggie sausage and a glass of grapefruit juice.
Verdict: Yum!! Yum!! Yum!! Everyone must try this!!

Verdict: Yum!, but a little disappointing
One of my favorite restaurants is Casablanca in Eugene, Oregon. They make the best falafel, and they serve it with great sauces. One of them is a jalapeno relish. It is spicy, and I love it. When I saw this recipe, I thought it would taste similar to that amazing, spicy sauce that I love so. Unfortunately, it is very different. Still yummy, but definitely different :)
Verdict: Yum!, but a little disappointing

Verdict: Yuck
Ingredients: 2 fl oz gin, 2 dashes grenadine, 1 egg white, 1/2 fl oz fresh squeezed lemon juice
Here is the finished product, all frothy and eggy :( We really could not get over the fact that it had raw egg in it. Not an appetizing thought :(
